Rosa Mexicano, tucked inside the Dolphin Resort at Walt Disney World, has been open since 2023 — and a recent return visit confirms it's holding up well as a solid escape from the theme-park dining grind. The restaurant leans into what it calls an "elevated fiesta" vibe: bright aqua and gold décor, large windows, open seating ranging from booths to bar spots, and upbeat music that keeps things lively without getting overwhelming.

The menu spans breakfast, lunch, and dinner, with a drinks list that punches well above its weight — over 100 varieties of tequila and agave-based spirits, plus frozen margaritas, wine, beer, and spirit-free options. The Frozen Pomegranate Margarita ($15), made with Hornitos Plata Tequila, pomegranate, triple sec, and fresh lime, leads with bright fruit flavor and a clean tequila kick balanced by a half-salt rim.

The food standout is the Chopped Cheeseburger Tacos ($20) — ground chuck, bacon, queso, poblano peppers, tomato, onion, shredded lettuce, ketchup, and mayo on housemade flour tortillas. The thick, fresh tortillas hold up to a juicy, bacon-laced beef filling, and the condiment combo genuinely delivers a cheeseburger impression. Two sides worth noting: the Frijoles Borrachos ($9), a hearty beer-braised bean soup with a noticeable jalapeño kick, and the Mac n Queso ($11), a sharp-cheddar pasta bake with a crispy top layer and rich, thick sauce underneath.

Rosa Mexicano is best suited to groups who want a festive, mid-range dinner — more polished than a quick-service stop but without the formality of a signature dining room.
