The Walt Disney World Swan and Dolphin Food & Wine Classic is adding something genuinely special to its 2025 lineup: an intimate, interactive tasting experience hosted by two of the culinary world's heaviest hitters. James Beard Award-winning chefs Michael Mina and Todd English — who both run restaurants at the Dolphin year-round — will come together for the first time at the event for a collaborative evening neither is doing solo.

The experience takes place Saturday, November 21, from 3:30 to 5 p.m. and is open to a limited number of guests. Working side by side, the two chefs will guide the group through ten courses — five from each kitchen — paired with beverage selections ranging from Italian wines to Napa picks. It's structured as much around conversation as cooking, with both chefs sharing stories about their personal heritage, global travels, and the dishes that have shaped their careers.

Mina's five courses lean into his Middle Eastern roots: think marinated big-eye tuna with crispy falafel and whipped tahina, triple-seared Wagyu striploin with matbucha and olive oil smashed sweet potatoes, and a basbousa and passionfruit cheesecake to close. English's half of the menu leans coastal and globally inflected, with highlights including brown butter miso poached lobster with truffled dashi glaze, pan-seared Nantucket scallops with spiced acorn squash and toasted hazelnut butter, and a roasted red beet chocolate gateau to finish.

Tickets for the collaborative tasting are $295 per person and can be reserved at FoodAndWineClassic.com, with space described as limited. The broader Swan and Dolphin Food & Wine Classic runs November 20 and 21, offering four hours of unlimited food and beverage tastings each night from the resort's 23 restaurants and lounges, plus themed areas and live entertainment along the landmark causeway.
