The Walt Disney World Swan and Dolphin Food & Wine Classic is adding something genuinely new to its November lineup: a first-ever collaborative tasting experience featuring two James Beard Award-winning chefs under the same roof. The annual event runs November 20–21, 2025, from 5 to 9 PM each evening, but this special session takes place before the main event on Saturday, November 21, from 3:30 to 5 PM for a limited number of guests.
Celebrity chefs Michael Mina and Todd English will work side by side in an interactive format, guiding guests through 10 carefully crafted courses paired with beverages sourced from destinations ranging from Italy to Napa Valley. The experience is designed to blend tasting, live culinary demonstrations, and personal storytelling — giving attendees a window into each chef's heritage, travels, and culinary philosophy.
Mina's five courses lean into his Middle Eastern roots and decades of restaurant experience, with dishes like marinated big-eye tuna with crispy falafel and whipped tahina, triple-seared Wagyu striploin with matbucha and olive oil smashed sweet potatoes, and a basbousa and passionfruit cheesecake with labne and pomegranate. English's five courses pay homage to coastal New England, featuring brown butter miso poached lobster with truffled dashi glaze, pan-seared Nantucket scallops with spiced acorn squash and hazelnut butter, and a roasted red beet chocolate gateau to close.
Beyond the food itself, both chefs are expected to interact directly with guests throughout the meal, sharing the stories and influences behind each dish. It's a rare chance to hear from two accomplished culinary voices in an intimate, conversation-driven setting rather than a traditional ticketed dinner.
