After a false start in late July, Six Ravens — the highly anticipated new restaurant concept from Gideon's Bakehouse founder Steve Lewis — is set to soft open at Disney Springs on Monday, August 3, 2026. Lewis confirmed the date in an interview with the Orlando Sentinel, though the opening has not yet been officially announced on Six Ravens' or Gideon's Bakehouse's social media channels, and hours have not yet reappeared on the Walt Disney World website.
Six Ravens is taking over the former Art of Shaving storefront at the Landing, just steps from the original Gideon's Bakehouse location. The menu centers on Coffyns — house-made yeast rolls stuffed with savory fillings inspired by Medieval European pastry traditions. Each Coffyn comes with a generous portion of dipping sauce. The sole dessert at launch is the Tart's Tempest, with the team planning to add more offerings over time, including collaborations with other local Orlando bakeries. Limited-edition collectibles will also be available for purchase.
Because the space is even smaller than Gideon's Bakehouse, a virtual queue system will be in place to manage crowds. Staff will add arriving guests to the queue on a first-come, first-served basis. Lewis encouraged patience, noting the queue will give guests a chance to explore Disney Springs while they wait.
Soft openings can bring unpredictable hours and sold-out items, so arriving early is the safest strategy. Lewis confirmed that Walt Disney World selected Six Ravens from among five distinct concepts his team developed and pitched — leaving fans curious about what the other four ideas might have been and whether any could appear at the resort down the road.
