Rix Sports Bar & Grill at Disney's Coronado Springs Resort has quietly been one of the better breakfast stops on Walt Disney World property, and its latest menu addition gives guests a fresh reason to seek it out. The restaurant recently replaced its popular chicken-stuffed Mickey waffles on a stick with a new plate called Chicken and Mickey Waffles, priced at $20.
The dish features Mickey churro waffles — crispy on the outside, soft and fluffy within, with a cinnamon-sugar flavor — topped with crispy chicken tenders tossed in a Nashville rub and finished with hot honey maple and powdered sugar. Diners actually receive both a Mickey and a Minnie waffle with the order, and syrup comes on the side.
The heat from the Nashville sauce builds gradually throughout the meal, landing at a medium level that adds a pleasant kick without overwhelming the sweetness of the churro waffles. The consensus is that dragging a bite of waffle through the spicy sauce pooled on the plate is the move. Those sensitive to spice may want to proceed with caution, but adventurous eaters should have no trouble.
Mickey churro waffles have been available at a handful of Disney World spots — most notably The Crystal Palace and Spyglass Grill — and first gained fame as a Disney Cruise Line breakfast item. Rix's new preparation puts a bold, savory spin on the concept. Reservations are available and are generally not hard to come by outside of major resort events.
