The dish pairs a slow-smoked lamb shank with creamy sweet corn risotto, fresh watermelon radish, a parsley salad tossed with red onion and light vinaigrette, and a rich demi-glacé served around the edge of the plate. The result is a layered combination of smoky, garlicky warmth from the lamb, bright acidity from the salad, and deep creaminess from the risotto.
The smoke on the lamb is serious — reviewers noted a pronounced bark and a spice rub that leaves a pleasantly tingly finish. That gaminess is front and center, so this one is squarely for fans of bold, robust meats like venison or duck. Mild-lamb people, consider yourself warned.
